Eat seasonal vegetables as much as possible. They are packed with nutrients and taste great. Nutrients from some vegetables are better absorbed when eaten raw and some vegetables give out maximum benefits when lightly cooked. Vegetables should always be washed and then cut, never the other way. However vegetables should never be over cooked as most of the nutrients will be lost. 1. Munch on baby carrots or carrot slices, marinated in lime, salt and freshly ground pepper, instead of chips. 2. Coat lightly any salad dressing made with olive oil onto fresh lettuce leaves, grated carrot, cucumber and tomato to make a filling for sandwiches and you can go easy with butter you can use 1 tea spoon of cheese spread along with it for children 3. Diced cucumber, onion and bell peppers combined with roasted peanuts and lightly seasoned with olive oil, slit green chillies, cilantro and squirt of lime juice makes a very crunchy and healthy snack even with cock tails. 4. Children can be enticed to eat more veggies by asking them to make their own stuffing for Frankies (rolls), pita bread or added to macaroni or noodles and coin new names for their preparation. 5. Most often boiled potatoes can be used as a thickener in soups instead of white sauce. 6. Make a light paste of corn flour and milk and use it instead of white sauce to add as thickeners for veggie dishes or to make Broccoli soup. 7. Puree cooked carrot and almonds along with milk to make enriched and creamy milk shakes or pudding. 8. Grated and lightly cooked cauliflower along with salt and spice, dressed with chopped cilantro makes a great filling for rotis or grilled sandwiches. 9. Cooked and cubed Beet root with spices and chopped cilantro using curd/ yogurt as a dressing makes an excellent side dish 10. Baby corn, cauliflower, carrots, capsicum ( bell peppers), onions can be marinated in low fat sour curd with salt and spice and cooked dry in a wok with a little olive oil to make `Kadia Khazana' 11. To encourage consumption of greens, palak or any green leafy veggies can be pureed and dough made with the puree than with plain water. 12. All left over vegetables including pumpkin sweet potatoes green banana can be combined and converted to make an interesting pot pourri, blended in with a little tamarind pulp, salt, sugar and spice.
