Cardiovascular diseases (CVD) are the leading cause of death globally. According to WHO statistics, by 2030, it is predicted that almost 23.6 million people may die from CVDs, mainly from heart disease and stroke. Diet especially soy consumption has received considerable attention as a CVD prevention strategy. Epidemiologists have long noted that Asian populations who consume soy foods as a dietary staple have a lower incidence of CVD than those who consume a typical Western diet. Also, studies in animals have suggested that soy protein lowers blood cholesterol concentrations, but similar studies in humans have yielded less consistent results.
